Throw it in a Pot...

I got my homework for FIT club, and it started out with a little encouragement to think about what we are eating, specifically that were getting enough fruits and veggies. Having bought several vegetable like things lately, I decided to throw them in together, apply heat, and see what happened. It came out not bad at all:

saute 1 small onion
chop 1 sweet potato, add to pan, cover about 10 minutes on med-low
add 1 can black beans, 1 can diced tomatoes, 1 tbsp cinnamon, 1 tsp thyme
stir. Cover. Simmer a while.

Eat.

Vegetables - check.
